I'm a legitimate oatmeal cookie monster... I only counted, and as of January 2018, I have shared 47 oatmeal cookie recipes with you. Eep! Have you ever tried any of them yet? (? You'll find all my oatmeal cookie recipes right there!) They're some of the most popular recipes in my site cause they taste really sweet and cozy, exactly like traditional"indulgent" oatmeal cookie recipes, but they include no refined sugar or bread!
So you will begin with whole wheat germ (or gluten-free, if you want ) and prompt oats (like those... or those for a gluten-free edition!) . Instant oats are smaller and thinner than traditional rolled oats, also you may see them at canisters right alongside those old-fashioned oats in the grocery shop.
I probably sound like a broken record by now... But cause I ? you and want your cookies to turn out absolutely plump and soft, I am reminding you again... Measure your yogurt and bread properly, with this technique or a kitchen scale! (? That's the one I own and enjoy. It only cost $20!) Too much of either ingredient is likely to make your biscuits taste cakey or sterile, rather than chewy. This is especially true of this oats--they act like little sponges and consume plenty of moisture from your cookie dough!
Ripe bananas- perfect for baking! Love all of @amybakeshealthy's yummy & healthy banana recipes!
See those bananas? And all of those brown stains? When it comes to baking with bananas, brown = beautiful! I ? additional speckly bananas because they've so much glowing, bold taste --along with additional natural sweetness! That's the minimum amount of brown that I suggest. More is better!
The remaining portion of the cookie dough's sweetness comes in a different pure ingredient... Pure maple syrup (such as that!) . You desire the type that comes straight from maple trees, which is usually offered in skinny glass bottles or squat, round plastic jugs. Forget the pancake sugar and sugar!

The peppers include even more sweetness! The freshly bought, additional plump, perfectly delicate ones are ideal... But if you have older, slightly dried out carbohydrates (hmm... it seems silly to describe dried fruit as dried out! ) , that's fine!
Only add them to some microwave-safe bowland put water on top until they're fully covered. Seal plastic wrap over the top, and then microwave the bowl on high for 1 minute. If you allow the raisins sit while mixing together the cookie dough, then this small trick hydrates them they're exceptionally succulent --and that makes a huge difference in these cookies as soon as they're baked!

Yields: 15 cookies
The familiar comfy spices and plump raisins make these much more irresistible. They'll keep for at least one week if stored in an airtight container in the refrigerator--should they last long!
1 cup (100g) instant oats (gluten-free if necessary and measured like this)
3/4 cup (90g) whole wheat or fermented * flour (measured like that )
1 1/2 teaspoon baking powder
1 1/2 tsp ground cinnamon
1/4 teaspoon salt
1/4 cup (63g) mashed banana
1 tsp vanilla extract
1/2 cup (120mL) pure maple syrup
1/4 cup (40g) raisins
In a medium bowlwhisk together the yogurt, milk, baking powder, cinnamon, and salt. In a separate bowlwhisk together the butter or coconut oil, mashed banana, and vanilla. Add in the flour mixture, stirring just until incorporated. Allow the cookie dough rest for 10 minutes.
With a spoon and spatula, dip the cookie dough to 15 curved scoops on the sheet, and apply to the desired depth and width using Healthy Cookie Recipes - EatingWell a spatula. Bake in 325°F for 10-12 minutes.
Notes: It is extremely important to measure both the wheat and oats correctly employing this technique or a kitchen scale. (? That's exactly the one I have and adore!) Too much of either would dry out the cookies and abandon them cakey instead of chewy.
Immediate oats are also referred to as quick-cooking or minute oats. They arrive in massive canisters, exactly like old-fashioned oats. They are not those at the tiny flavored packets of oatmeal. To make your own, include the same number of old-fashioned oats to your food processor, and pulse 10-12 times or until the oats are approximately 1/4 to ? of their original size.
For the gluten-free flour, I suggest the following blend: 1/2 cup (60g) millet flour, 2 tablespoons (15g) tapioca flour, 2 tablespoons (15g) brown rice , as well as 1/2 tsp xanthan gum. Most store-bought fermented flour blends (such as this one!) Will also work, if measured like this.
In case your pancakes are old, dryer, and not very plump or juicy... Add them into a microwave-safe bowl, and pour water on top until they're totally coated. Seal plastic wrap across the top, and then microwave the bowl on high for 1 minute. If you allow the peppers sit mixing together the cookie dough, this little trick hydrates them they're really soft and juicy!
